Nikolaos Vastakis Odenwelder

Nikolaos is a Hellenic-American hospitality professional and researcher of Greek dance and traditions, originally from Atlanta, GA. Immersed in Greek customs from a young age, he developed a deep appreciation for how food and dance bring people together. He earned his degree in Culinary Arts from the Culinary Institute of America in Hyde Park, NY, in 2022. After a period back in Atlanta, he returned to New York and worked with the Hellenic Roots Foundation until April 2025. While no longer teaching professionally, he continues to actively research and advise on the traditional dances and customs of Greece. He currently serves as General Manager of Pip's Cafe & Provisions in Greenport, NY.
